These are seriously yum! You know how I feel about baked goods posing as healthy snacks (ahem Paleo baking..what a joke!) If you need a snack, there’s nothing wrong with some chopped vegies or fruit. But we all know that sometimes that JUST WON’T DO.
These choc goji balls are a nutrient dense snack, packed with walnuts, goji berries and tahini, that will tide you over to your next meal when you’re feeling ravenous. Because they are so rich and dense, I think that you’ll find that just one is enough. Which is more than I can say for those junky packets of rice crackers!
The kids love these too. They’re easy to prepare on the weekend, then pop in the fridge for a snack that option that will last you throughout the week.
1/3 cup dark cocoa powder
1 cup walnuts
1/4 cup goji berries or cranberries
2 tablespoons tahini
8 pitted dried dates
1/2 teaspoon vanilla extract
1 tablespoon water (add more if the mixture isn’t holding together)
Dessicated coconut to coat the balls
1) Pop all the ingredients except the dessicated coconut in a food processor until you have a nice dough. I quite like to leave the walnuts a bit chunky, but that’s up to you. Add a little more water if your mixture isn’t holding together.
2) Roll into little balls, then sprinkle with a little dessicated coconut. Pop in the fridge to firm up. Ta-da! A delicious, healthy snack that won’t send your blood sugar crazy.
